The Colombia Nativo Nogales comes from a legacy family farm in Pitalito, Huila that has been dedicated to innovation, quality, and sustainability for over 8 decades. Highlighting their focus on innovation is the way this coffee is processed; the experimental mosto method incorporates naturally occurring yeasts pulled from coffee cherry mucilage of the same farm and coffee variety to assist in the anaerobic fermentation process. By isolating this positive bacteria and keeping it as an activator in the early stages of processing, notable improvements can be found in body, acidity, mouthfeel, and general cup quality. For this particular coffee, that translates to a balanced and smooth body with a soft and bright acidity and tasting notes of tropical stone fruit, lime, and chamomile.
