The region these heirloom varietals are from produces a truly unique coffee with a wide range of tasting notes. The range is most noticeable when the fruit notes drop out and the acidity tempers as it cools to a cocoa nib profile.  Our roasting technique is careful to preserve and develop terroir and this coffee exemplifies this better than most. Bright herbaceous with juicy muddled tropical fruit notes, finishing with cocoa nib.
